In the higher gears, there's less of a gear reduction between the engine and the rear wheels. Therefore when you disengage the clutch in a higher gear, the engine quickly assumes the rpm that the rear wheels make it go. That doesn't work so well in lower gears, since you'd be trying to make engine spin more than 3x as fast as you would in 5th gear.

It's always easier on the side that has the most mechanical advantage.
